Conversation with Merci Coffee Truck

If Merci Coffee Truck sounds familiar to you, you’ve probably read my previous review of them (which you can find here if you haven’t). This past week, Matt and Jess took some time to answer a few questions that I sent them. Let’s dive in!

How’d the idea for a coffee truck come about?
In 2015 Jess and I moved to L.A. for 9 months and while down there a friend of mine took us to Bluebottle and had us try his coffee, it literally tasted sweet like blueberries. Over 2015/16 we spent hours of time researching (drinking coffee) and decided we wanted to start a cafe. We moved to Belfast, Northern Ireland in 2017 and both worked at specialty cafe’s while working on a business plan. Long story short, while living in Belfast we decided that a coffee truck was a much more affordable way to start up a business and moved back to B.C. and got the show on the road! 5 years later, boom Merci was born.

What are your personal favourite coffee drinks?
Oof, this one is dependant on the time of day/weather. A super fruity black coffee is how I got into this coffee thing so that is where I will start! Everyday drink, flat white. Hot weather on holiday, some kind of weird iced drink (we offer tonic espresso drinks and a lemonade cold brew.

Where is your favourite location to park the truck and why?
Favourite spot so far has to be in our neighbourhood of Garrison, Chilliwack. We love seeing all our neighbours and serving them 🙂

Why the name ‘Merci’?
*Disclaimer* I copied this from the blog on our website (www.mercicoffeetruck.com)

Why call it Merci if you pronounce it “Mercy”? The word came into early French as mercit or merci with much the same meaning as was later passed on to our English word mercy. Both words come from the old French word merci meaning reward, grace, or kindness. So whether your first thought is gratitude, thanks, or undeserved kindness we are keeping all of it top of mind in our service, design, coffee + connections.
It also just sounds cool 😉

What, in your opinion, is the best coffee spot (other than you guys, obvs) in Chilliwack?
In Chilliwack? Best location to chill with your drink has to be the Amble truck for sure! When you can sit inside somewhere, the Anitas cafe is ideal for enjoying some of the best pastries I have had. And who knows, there might be a Merci 2.0 coming in the distant future.

So, thanks to Matt and Jess for answering these questions- it’s much appreciated. Be sure to check them out next time you’re in Chilliwack , and don’t forget to follow them on Instagram.
